raw oatmeal

4 Portions:  (not the goodsugar recipe)

Ingredients:
- 1 cup rolled oats
- 2 cups water
- 1 cup cashews
- 4 Medjool dates, pitted
- 1 teaspoon vanilla extract
- Pinch of salt

Instructions:
1. In a bowl, combine the rolled oats and water. Let them soak for about 15 minutes or until the oats soften.

2. Meanwhile, prepare the cashew nut milk. In a blender, add the cashews and 3 cups of water. Blend on high speed until smooth and creamy.

3. Take 1 cup of the cashew nut milk and set it aside for later use.

4. To the remaining cashew nut milk in the blender, add the pitted dates, vanilla extract, and a pinch of salt. Blend until the dates are fully incorporated and the mixture is smooth.

5. Pour the cashew nut milk-date mixture into the bowl with the soaked oats. Stir well to combine.

6. Divide the mixture into four serving bowls or jars.

7. Place the bowls or jars in the refrigerator and let them sit overnight or for at least 4-6 hours to allow the oats to absorb the liquid and soften.

8. Before serving, give the oatmeal a good stir. If the mixture seems too thick, you can add a little more of the reserved cashew nut milk until you reach the desired consistency.

9. Serve the raw oatmeal topped with your favorite toppings such as sliced fruits, nuts, or a drizzle of honey, if desired.
